Fischer Opens new chapter

UNLV grad Brenda Fischer is back in Las Vegas after a stormy run as city manager of Glendale, Ariz., home to the embattled Coyotes franchise in the NHL.

She has started a new consulting business and is selling real estate in Las Vegas after her sudden departure from the Arizona city in February, according to a report by the Phoenix Business Journal.

The publication said Fischer’s consulting business, Fischer Consulting LLC, aims to help governments as well as nonprofit and private sector clients.

In addition, the firm will help public and private sector clients with human resources training and strategic planning.

She’s also looking for a new city manager position after serving in Glendale from 2013 to 2015 and Maricopa from 2011 to 2013, the journal said.

Fischer started a residential real estate brokerage business with Century 21 Consolidated in Vegas.

She told the publication that she’s had a Nevada real estate license for the past 14 years and decided to activate it along with her other career pursuits.

Fischer received her bachelor’s degree from the University of Nevada-Las Vegas and has family in Vegas.

A taste of Vegas in Italy

Chef and cookbook author Rick Moonen, owner of Rick Moonen’s RM Seafood at Mandalay Bay, was invited as a guest chef to the USA Pavilion at Expo Milano 2015.

Expo Milano 2015 began in Milan, Italy, on May 1 and will run until to Oct. 31.

It’s expected to draw more than 20 million visitors.

Moonen was one of 50 guest chefs selected by the James Beard Foundation to represent the USA’s “Culinary Dream Team.” The group of chefs are recognized by the James Beard Foundation, the International Culinary Center, and are also members of the American Chef Corps, an initiative launched by the U.S. State Department to elevate the role of culinary engagement in America’s formal and public diplomacy efforts.

Moonen hosted dinner June 9 and 10 for more than 50 guests each night in honor of the expo’s theme, “Feeding the Planet, Energy for Life.”

The dinners were housed at James Beard American Restaurant in the Penthouse Suite inside the Seven Stars Galleria Hotel in Milan.

Highlights from the meal included dishes that showcase Moonen’s passion for sustainable seafood found at Rick Moonen’s RM Seafood at The Shoppes at Mandalay Place, such as the brandade cake on fennel with truffle vinaigrette, New England style cobia chowder, and tea- smoked True North salmon with cucumbers and horseradish cream.
